Champagne Cupcakes

Happy {belated} New Year!

I’ve been quite a busy bee the past few months and have, admittedly, been slacking on my blog posts. Well, New Year = New Goals, right?! I’m going to try and post 2 recipes every week!

Before I fill you in on an awesome Champagne Cupcake recipe, let me tell you what I’ve been up to lately :)

I keep trucking away on growing my cupcake business – and things are going pretty good if I do say so myself. We are still working on renovating the cupcake truck and plan to have it up and running in February. I can’t even tell you how excited I am about it! Picture to come soon, I promise! I also had my first cupcake event at a local wine bar and it was a sweet, sweet success. I baked like a crazy women 600 mini cupcakes to give away as samples. People who came to the event were so friendly and so excited about my cupcakes. It felt really good to know that what I’ve been working toward for so long is starting to come together.

Also, my Etsy shop is still booming – keep an eye out for new Valentine treats and some really good discount codes!

Ok, enough about me.  Are you ready to whip up a batch of deliciously boozy cupcakes? Great! Let’s get started.

Champagne Cupcakes

What you’ll need for the Cake Batter:

  • 2 large eggs
  • 2 cups flour – I like to sift it first
  • 2 teaspoons of baking powder
  • ¼  teaspoon salt
  • ½  cup unsalted butter. Make sure it is at room temperature (microwave for 15 sec)
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¼  cup milk
  • ½ Cup of Champagne (any brand will work)
  • 1/8  teaspoon cream of tartar

What you’ll need for the Frosting:

  • ½  cup butter or margarine, softened
  • 4 cups powdered sugar
  • ¼  cup champagne
  • 1 teaspoon vanilla

Cupcake Directions:

  1. Preheat oven to 350 degrees F
  2. In a mixing bowl whisk together the flour, baking powder, and salt. Set aside.
  3. Separate the eggs, placing the yolks in one bowl and the whites in another bowl.
  4. Using an electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add 3/4 cup of the sugar and beat until light and fluffy (about 2-3 minutes).
  5. Scrape down the sides of the bowl. Add egg yolks, one at a time, beating well after each addition.
  6. Beat in the vanilla extract.
  7. Mix in the Champagne
  8. With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour.
  9. Use a hand mixer to beat the egg whites until foamy. Add the cream of tartar and continue beating until soft peaks form.
  10. Gradually add the remaining 1/4 cup of sugar and continue to beat until stiff peaks form.
  11. Gently fold the egg whites into the batter until combined. Do not over mix the batter or it will deflate.
  12. Bake for 18 – 20 minutes

Frosting Directions:

  1. In your mixer, cream the butter on medium high until it turns white and fluffy (about 5 minutes)
  2. Add the powdered sugar one cup at a time- mixing on medium speed
  3. Add the champagne and the vanilla – mix for 2 minutes or until well combined
  4. If you want thicker buttercream – add more powdered sugar.

These cupcakes are delicious and add the perfect amount of elegance to any party. I like to decorate them with little pink and white pearls.

Until next time, stay sweet!

Xoxo, Jill

It’s Been A Year!

15 Sep

Today is a very special day for me and I’m excited to share it with you all. One year ago today I opened up Stay Calm Cupcake Shop. It’s cliché to say, but I honestly can’t believe how fast the time has gone by.
In the past year I have learned so much about myself, my passion for cupcakes, the importance of a great customer, and the best way to be successful in an industry that’s always changing. I want to share a few key things that helped me succeed over the past year. I think these are important things to remember when running your own shop.

Stay Calm Cupcake

1. Do what makes you happy, even if you think it’s impossible! I thought that running a successful online shop and having a full time day job would be impossible. It’s not impossible; it just takes a bit of hard work and alot of dedication.

2. Promote your shop like it’s your job – because it is! I never let a day go by when I don’t post, comment, or interact on social media sites. Make Twitter, Facebook, Pinterest, Instagram your best friends! They are free tools to help you network and promote your shop.

3. Give people more than they expect. I can’t tell you the many times I’ve given people free cupcakes, surprise samples in the mail, or extra goodies in an order. A little thoughtfulness goes such a long way with your customer.

4. Blog! I love blogging, and don’t post as often as I should. But I can tell you that my inspiration comes from all of the amazing bloggers I interact with on a daily basis. Blogs are great for getting inspiration, support, and even publicity. I would not have been so successful this year had it not been for blogs like: The Cupcake Blog, Sock It To Me, Mrs. Stephanie T, Delightful Designs, It’s Simple Love, and so so so many others who supported and promoted my shop!

5. Trust your customer. Feedback is key. Listen to what your customers are telling you and react accordingly. Without a solid customer base, I would have nothing. It’s important to keep that in mind!

6. Lastly – Make friends with other shops. Don’t be afraid of competition. Sometimes a little healthy competition is good :) I have met so many incredible etsy shop owners that have more than inspired me to improve my shop.

So, what’s next for Stay Calm Cupcake?

Right now I am developing some very yummy fall flavors including Halloween, Thanksgiving, and Christmas treats. I am working with a designer to launch my own website, and am continuing to look for a cupcake truck to purchase. I’m happy to report that my dream of owning and operating the StayCalmCupcake Truck is closer now than ever. I can’t share too much right now, but I’ll keep you posted :) I also continue to cater parties and deliver to locals in the Volusia County, Florida area. Things are moving along nicely! I couldn’t feel more blessed.

Again, thank you for all the support and cupcake purchases over the past year! I cherish all of you and look forward to many more years of successful cupcake baking!

Use code “SweetYear” for a 25% off discount on any single item in my shop. Offer good Until October 1, 2011

Marshmallow Love!

11 May

Marshmallow Whip Frosting

To be honest, I often get tired of using classic vanilla frosting for my cupcakes. I know it’s a favorite of many, but I like to mix it up a little. This Marshmallow frosting is the perfect way  to add some variety your cupcakes!

It’s a great addition to chocolate cupcakes, lemon cupcakes, strawberry cupcakes, or my favorite..coconut cupcakes! Enjoy xo

Looks Delish!

Marshmallow Whip – From the book “Baking: From my home to yours”

1/2 cup egg whites (about 4 large)
1 cup sugar
3/4 teaspoon cream of tartar
1 cup water
1/2 tablespoon pure vanilla extract – 1/2 tablespoon of Marshmallow flavoring

  1. Put the egg whites in your mixer bowl or in another large bowl – Make sure the bowl you use is 100% dry.
  2. Put the sugar, cream of tartar and water in a small saucepan and stir to combine. Bring the mixture to a boil over medium-high heat, cover the pan and boil for 3 minutes.
  3. Uncover your saucepan and allow the syrup to boil until it reaches 242 degrees F on the candy thermometer. While the syrup is cooking, start beating the egg whites on medium-low speed.
  4. Remove mixture from heat – let cool until temperature reaches 235 degrees.
  5. When the syrup is at about 235 degrees F, begin beating the egg whites on medium speed with the whisk attachment or with a hand mixer. If the whites form firm, shiny peaks before the syrup reaches temperature, reduce the mixer speed to low and keep mixing the whites until the syrup catches up. With the mixer at medium speed, and standing back slightly, carefully pour in the hot syrup, pouring it between the beater(s) and the side of the bowl.
  6.  Add the vanilla and marshmallow flavoring and keep beating the whites at medium speed until they reach room temperature, about 5 minutes.

Use Marshmallow Frosting for a Smore's Cupcake!

Check out this awesome shop and enter the giveaway. Have A Sweet day! xoxo

Born with an overactive imagination and a passion for sewing, I have always enjoyed creating pretty and feminine items.   I started sewing when I was around 10, out of desperation to fix my favorite bean bag doll that had been vigorously loved. I have been hooked ever since. So what inspires me?  Ruffles, polka dots and vintage fashion. I am addicted to beautiful fabrics and colorful ribbon.  I can never leave a pattern how it is. I must always change something. It’s just how I am.  It is so fun and challenging to make it my own.

I started my sewing blog, Sew Determined, just a few months ago as a New Year’s challenge to myself to really step up my sewing skills. I also wanted to encourage other time crunched gals like me to take up the art and see how much fun creating can be.
One of my other goals I set was to make a complete wardrobe for myself by the end of the year.  While on this quest, I decided “Why not share some of these fun outfits with others?” That’s how Call Me Cordelia on Etsy was started.  There is something so amazing to wear something that was made just for you by a real person you “kinda” know and not some faceless person in a factory. I just love that about Etsy.  It’s a place where super talented people come together and sell amazing things.

I am so excited to be participating in this blog crawl giveaway! I am happy to announce that I will be giving away from my Call Me Little Cordelia collection, a fuchsia pink, super fluffy tutu! This tutu is sewn, not tied, with yards upon yards of fluffy pink tulle.  The waist band is a cute pink and green grosgrain ribbon with 1” wide elastic encased within for a no-itch waist.  Playtime should be fun, not itchy and uncomfortable.  This tutu has a waistband that measures 20 inches with a stretch up to 24” and is 14″ in length.  Good luck and I hope you win!

So how do you enter this fabulous giveaway? Glad you asked.  To enter the Sew Determined child’s tutu giveaway you simply need to:
  1. “Like” Sew Determined on Facebook
  2. “Follow” me  on my blog Sew Determined
  3. Leave a comment on my blog.
  4. Go to my Etsy shop Call Me Cordelia and heart your favorite item!
Doing all four of these things will enter your name 4 times for a chance to win the super-duper cute tutu skirt!

Make sure to head over to Sew Determined to enter the giveaway!

FREE Printable Cupcake Toppers

Cute Cupcake Toppers - for FREE!

I used to think that cupcake toppers were unnessecary. I used ot think that if you took the time to put something on a cupcake, it should be edible. But…I have changed my mind. I’m a female, so I’m allowed to!

I have slowly grown to love the idea of cupcake toppers. Mostly for their versatility in design and simplicity in execution.  Cute little designs glued back-to-back with a toothpick stuck in the middle – such adorable finishing touch to any cupcake!

Cupcake toppers are great for personalizing birthday parties, office parties, and holiday parties. Here is a collection of FREE cupcake topper cut-outs. All you have to do is print them, assemble them, and use them!

I recently used cupcake toppers for a little girl’s 2nd birthday party I catered– they were pink and blue with baby elephants! The toppers really did add the perfect finishing touch to the cupcakes. Enjoy the freebies, and happy decorating!

Cupcake Fillings

22 Mar

I cannot tell you how many frustrated evenings I have spent trying to fill cupcakes with various creams, jams, and candies. I think every cupcake baker – at one time or another has felt this same irritation. If you cut a hole in each cupcake, it takes forever , if you just jam your filling tip into the cupcake, you don’t have enough room for the filling, and if you use an apple corer you end up taking too much cake out….oh the perils of  filling a cupcake – haha.

Cupcake Corer!

Not to worry, my dear cupcake lovers – I have found a solution!! Williams-Sonoma sells a “Cupcake- Corer” – perfect for all your cupcake filling needs. The best part about this product is that it only costs $5.00 – what a deal!! You simply push the corer into your cupcake and pull up. There you have it, a perfectly hollowed cupcake! The corer does all the work for you! I have read the reviews and they all seem positive. I wish I could give you my own review, but sadly enough I do not have this wonderful cupcake corer yet. I tried to order it online but it was “temporarily out of stock”. It is available in their store though – which is where I’ll be purchasing mine soon!

So what type of fillings are you going make now that cupcake filling is made simple?? I love a double berry filling but I also really enjoy a creamy Peanut Butter filling inside of a moist chocolate cupcake.

Peanut Butter Filled Chocolate Cupcakes

Peanut-Butter Filling

  • 2 sticks of unsalted butter
  • 4 cups of powdered sugar
  • 1 tsp of vanilla flavoring
  • 2 cups of Peanut Butter
  • 2 tsp of milk

In your mixer, on medium high,  cream together the butter and the peanut butter. This usually take 2-5 minutes to achieve the proper consistency

Add your powdered sugar one cup at a time, mixing in between each cup

Continue mixing on medium high for 1 minute

Add your vanilla and your milk – mix for another minute. You’re frosting should be thick and creamy. If it is not the consistency you want, continue mixing for another 2 minutes.

Fill your chocolate cupcakes with this creamy deliciousness and enjoy!! Top with chocolate or peanut butter frosting – nothing is better!

Stay Sweet,

Jill xoxo
