Red Velvet Cupcakes

Happy Friday! It feels so good to know that in a few hours, my weekend will be here! I recently made red velvet cupcakes for a friends birthday and rembered just how much I love this recipe. Its such a great recipe that I am recycling this post from when I originally posted in over a year ago. Enjoy!

Red Velvet cake and I used to have a bittersweet relationship…I could never get the recipe “just right”. That was until I found a recipe that I actually like, and am capable of creating. I adapted this recipe from Bobbly Flay’s show “Throwdown with Bobby Flay”. Enjoy the recipe, and enjoy all the praises you’ll get when you pass these little guys out.

Red Velvet Cupcakes

Makes 16 Large cupcakes – 24 regular size cupcakes

Ingredients

For the cupcakes:

  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking soda
  • 1 1/4 teaspoons salt
  • 4 tbs unsweetened cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 ½  granulated sugar
  • 1 1/4 cups buttermilk
  • 3  large eggs
  • 2 tsp of red food coloring
  • 1/8 cup of water
  • 2 tsp of vanilla
  • 1 ¼ tsp of vinegar (white or apple cider)

Directions

Preheat oven 350 degrees F.

Sift together flour, baking soda, salt, and cocoa powder into a bowl and set aside. (**Sifting is very important here – I usually skip sifting, but I don’t skip it in this recipe because without sifting, your cupcakes won’t be fluffy and moist.)

In a mixer fitted with the paddle attachment, mix oil, sugar, and buttermilk until combined. Add eggs, food coloring, vinegar, vanilla and water and mix well. Add the dry ingredients a little bit at a time and mix on low, scraping down sides occasionally, and mix until just combined. Be sure not to over mix, or the batter will come out tough.

Line your cupcake pan with paper liners, scoop the batter into the liners and bake at 350 degrees F for 20 to 30 minutes or until the toothpick comes out clean. Let cool

 Cream Cheese Frosting

  • 2 packages of 8 oz. Cream Cheese
  • 3 cups of powdered sugar
  • 1 tbs of vanilla extract
  • 1 tbs heavy whipping cream
  • 2 Sticks of unsalted Butter

Cream together cream cheese and butter – Mix on high speed up soft and well combined

Add the powder sugar one cup at a time – mixing thoroughly after each cup

Add in the vanilla and mix well

Beat on medium high speed until desired consistency is achieved.

Apple Pie Cupcakes!

Alright, I’m back! Sorry for being away for the better half of last month. If a crazy work schedule, endless amounts of late night baking, and an almost consistent stream of delivery orders aren’t good excuses…well then, I don’t have an excuse at all. Hopefully this SWEET recipe for apple pie cupcakes will help you forgive me.

I recently got a mini pie maker (yes, miniature, personal pies! Squee, I was so excited when I saw it on sale. I could not have physically left the store without having it as my own!) Making mini pies got me thinking though. A warm vanilla cupcake stuffed with apple pie filling and topped with cinnamon brown sugar frosting sounds really yummy! And I was right – it is so delicious. Even better – it’s just in time for the holidays!

Apple Pie Cupcake Recipe

Cupcake Batter

  • 1 cup unsalted butter
  • 2 cups sugar
  • 1 1/4 teaspoons vanilla extract
  • 4 eggs
  • 3 cups sifted cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • Regular or silver cupcake paper liners

** I add 2 tbs of lemon juice to this recipe. You can’t taste the lemon in the cupcake; it just improves the vanilla flavor. Make sure to not put more than 2 tbs though, or you’ll end up with lemon cake instead of vanilla 😉

  1. Preheat the oven to 350 degrees F.
  2. In a mixer with a whip attachment, cream the butter until light and fluffy. Add the sugar and continue to cream. Gradually add the vanilla and eggs and mix in well. Sift together the dry ingredients; then mix into the butter mixture alternating with the milk. Pour batter into cupcake paper-lined muffin tins filling them 3/4 full.
  3. Bake at 350 for 10 minutes.
  4. At the 10 minute mark, take your cupcakes out and spoon in some apple pie filling (directions below) to the center of each cupcake. I used 1 tbs for each cupcake and it turned out great.
  5. Put back in the oven and continue baking for 12-15 minutes

Apple Pie Filling

  • 4 Golden Apples
  • ¼ cup of flour
  • 1 cup of powdered suagr
  • 4 tbs of apple juice
  • ¼ cup of sugar
  • 3 tsp of cinnamon
  • ½ stick of butter
  1. Peel your apples and dice them into small cubes.
  2. In a medium microwave-safe bowl combine your apple juice, flour, sugar and cinnamon
  3. Cube your butter and add it to the mixture in the bowl
  4. Add you apple chunks and mix well
  5. Cover with plastic wrap and microwave for 10 minutes – stirring halfway through
  6. Place in the fridge to cool

Cinnamon Brown Sugar Frosting

  • 1 stick of unsalted butter (softened)
  • 1 stick of salted butter (softened)
  • 4 cups of powdered sugar (sifted)
  • 3 tbs of half and half
  • 1 tbs of vanilla
  • 2 tbs of cinnamon
  • 2 tbs of light brown sugar
  1. In your stand mixer, cream the butter and brown sugar on medium high until it turns white and fluffy (about 5 minutes)
  2. Add the powdered sugar one cup at a time- mixing on medium speed
  3. Add the half and half and the vanilla – mix well for 2 minutes or until well combined
  4. Add the cinnamon and mix well. Add more if the flavor is not as strong as you prefer
  5. If you want thicker buttercream – add more powdered sugar.

There you have it. Frost your delicious apple pie cupcakes – top with some extra cinnamon if you want – and enjoy! These are going to be a definite addition to my thanksgiving dessert table.

Candy Apple Cupcakes

Happy Monday!

I hope everyone had a great weekend filled with yummy sweets and lots of relaxing. My weekend was packed with lots of baking, birthday parties, and puppy love. If you follow me on Facebook or Twitter, you will know that I recently got a new pup. His name is Hugo and he is such a love. I’m a new dog mom, so if any of you have advice, don’t be shy. Fill me in!

Let’s get to the sweet stuff though. I’ve been busy in the kitchen getting ready to launch all of my fall flavors on my Etsy shop. In doing so, I have come up with some awesome recipes that are sure to be huge hits at your office parties, family dinners, holiday get-togethers, and more.

I really love the flavor combination that a candy apple provides. With the start of school, it seemed like the perfect time to make candy apple cupcakes. A little sweet, a little tart, a lot of yummy! Almost a year ago, a friend of mine sent me a recipe for Caramel Apple Cupcakes. This recipes is very similar, but with a twist in the frosting.

Candy Apple Cupcakes

Ingredients:

2 1/4 cups all purpose flour
1 1/4 cups sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 large eggs

1 Tbs of lemon juice
1/2 cup melted butter
1 cup applesauce
1 cup shredded or finely chopped, Granny Smith apples

Directions:

1.       Preheat your oven to 350 degrees. Prep a cupcake pan with liners.

2.       In a large bowl whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

3.       In a mixer, stir the eggs, butter, and applesauce and lemon juice. Mix until combined. Carefully add the dry ingredients.

4.       Peel and slice the apple. Then using a grater, grate the apple into fine shreds, like cheese. You can also chop it finely which works just as well. Now stir the shredded apples into the batter mixture.

5.       Bake for 15-20 mins, I find that 18 minutes works best. You don’t want the inside of the cupcake to be mushy.

Candy Flavored Frosting

I used a vanilla frosting base and drizzle red candy syrup over the top. I have seen people forgo the frosting and just dip the cupcake into the candy syrup (photo below). Either way will work and either way will be delicious!

For the frosting:

2 sticks of butter (unsalted)
1/2 cup butter (salted)
1 cup packed brown sugar
1/4 cup whole milk
3 cups powdered sugar, sifted
1 teaspoon vanilla extract
1tsp cinnamon
1Tbs of Apple Juice
½ Tbs of lemon juice

1.      In a mixer, beat 2 sticks of butter until light and fluffy. Add in 1 cup of powdered sugar and mix for 1 minute. Let sit

2.      In a saucepan on medium heat, melt the butter and brown sugar. When they are melted and bubbly, add the milk. Carefully raise the heat and bring the mixture to a quick boil. Careful – you don’t want to burn it. Once it foams up and turns that lovely caramel color, take it off the heat immediately.

3.      Remove pan from heat and stir in the remaining 2 cups of powdered sugar and vanilla, cinnamon and both apple and lemon juice, mixing until frosting is smooth.

4.      Let cool completely

5.      Once cool, slowly pour into your mixer and combine with the butter and sugar you previously prepared. Mix until light and fluffy. If your frosting is to thin, add more powdered sugar.

Candy Drizzle

  • 2 cups sugar
  • 3/4 cup water
  • 1/2 cup light corn syrup
  • 2 teaspoons red food coloring
  1. Bring water, sugar, corn syrup to a boil in a small pot, add food coloring and reduce heat to a simmer. Watch the pot carefully cook it this way for about 20 minutes. After 12 minutes, check the temp using a candy thermometer .You need the candy to reach 310°F                                            (If you don’t have a candy thermometer, use the water test. Drip a few drops of the hot candy into a small bowl of room temp water. When the candy holds its form or makes ribbons, it is done.)
  2.  When candy is done, drizzle it over each cupcake. It will harden and make a very delicious topping for y our Candy Apple Cupcakes.

Cinco De Mayo! Drink Up!

You absolutely CANNOT celebrate Cinco De Mayo without the Margarita! And what better way  to enjoy the fresh lime and tequilla combo, than in a cupcake version!

Margarita Cupcakes

Ingredients:

3 cups all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1 cup (2 sticks) unsalted butter, at room temperature
2 cups sugar
4 large eggs, at room temperature
3 limes, zested and juiced
1.5 tsp. vanilla extract
1 cup buttermilk

Preheat oven to 325 degrees F. Line two muffin pans with cupcake liners. (Which I think is pretty obvious, but I figured I’d say it anyway)

Whisk together the flour, baking powder and salt and set aside.

Using a mixer, cream together the butter and sugar on medium-high speed until light and fluffy.

One at a time, add in the eggs. Mix well after each addition.

Add in the lime juice, lime zest and vanilla and beat well. Make sure your lime zest is small rather than large chunks – it will give the cupcake better texture.

Beat the flour mixture into the bowl. Do this in three additions, starting with the flour mixture and adding the buttermilk after the first and second flour additions.

Fill the cupcake liners about half-full with the batter (Again, obvious)

Bake 20 minutes until a toothpick comes out clean. Cupcakes will not brown so don’t be alarmed if they still look white.

Cool in the pan for about 5 minutes.

Tequilla Lime Buttercream

2 cups sugar
8 large egg whites
Pinch of sea salt (a pink is about ½ tsp.)
1 1/2 cups (3 sticks) unsalted butter, at room temperature
4 tbsp. freshly squeezed lime juice

1 tsp of vanilla
3 tbsp. tequila (maybe more depending on the kind of day you’ve had)

Combine sugar, egg whites and salt in a medium sauce pan and heat until it reaches 160 degrees F and the sugar has completely dissolved.

Transfer to a stand mixer and beat on medium-high until stiff peaks form and it has cooled to room temperature. This takes awhile – so don’t get discouraged, just practice patience…or have a drink of that tequila.

Add in the butter, two tablespoons at a time — mixing well after each addition.

The mixture may start to look curdled…just keep mixing it and, eventually, it will look like frosting.

Stir in the lime juice and tequila.

**Before piping the frosting onto the cupcakes, I make a mixture of half lime half tequila to brush on the top of my cupcakes – This gives it a more authentic margarita taste vs. a lime cupcake with a kick. Trust me, you’ll want to do this **

Pipe the frosting onto the cupcakes

Decorate with a slice of fresh lime (or a candy lime) and green sprinkles.

I added straws to mine because I thought it looked cute – but it’s not necessary.

Directions:

  • Beat butter at medium speed with an electric mixer until creamy; gradually add 1 cup powdered sugar, beating at low speed until blended.
  • Add milk, beating until blended. Gradually add remaining powdered sugar, beating until blended. Stir in 2 tbs grated lime rind and 3 tbs of lime juice.

Perfect for frosting Vanilla, Coconut, Strawberry, or Lemon Cupcakes!

Fresh Berry Frosting

25 days til Valentine's Day !

Can you believe it is already the end of January?!? I do not enjoy how fast time is flying. Seems the older I get, the more I find myself questioning where the heck the time went!! It doesn’t help that many stores had Valentine’s decorations and candy on sale before Christmas was even over. I LOVE Valentine’s day – but they started pushing it a little early this year!

Speaking of , there are officially 25 days left until Valentine’s Day. Which means we all still have a decent amount of time to think about what we are going to get that special someone on the day that celebrates love! It also means that for the next 25 days, I have an awesome excuse to bake, decorate, and eat tons of girly pink cupcakes!

Today I want to share some Valentine Inspiration with you. Hopefully this will help you start thinking about the many SWEET ways we can celebrate Valeninte’s Day – starting with fresh Strawberry Frosting!

**The frosting in the pictures is my Strawberry Buttercream. Unfortunately, I do not have a picture of my Fresh Strawberry Frosting. **

Fresh Strawberry Frosting

This yummy strawberry frosting is perfect for any chocolate, vanilla, or lemon cupcake. It is fresh, elegant, and taste amazing! The pink color and the fresh strawberries make it the perfect Valentine’s treat. This frosting is different from my Strawberry Buttercream, but just as easy and just as yummy! 

 Ingredients

1.    4 cups of fresh strawberries (frozen will work just as well, make sure you thaw them though)

2.    1 stick of room temperature butter

3.    8 oz of low-fat cream cheese

4.    ½ tsp of vanilla extract

5.    4 cups of powdered sugar

6.     1 cup of white sugar

7.     2 tbs of water Pink food coloring (optional)

Directions

• In a mixer on medium high speed with your paddle attachment, cream together the butter and cream cheese

• Slowly add in the powdered sugar one cup at a time, making sure it is fully combined before adding the next one.

• Add the vanilla and mix on high for 3-5 minutes

• Dice up the strawberries in small cubes, put in a medium sauce pan

• Add 1 cup of white sugar and 2 tbs of water to the strawberries

• With a potato masher, mash the strawberries together with the sugar

• Heat on medium heat until mixture comes to a boil.

• Let cool in the fridge until mixture thickens

• Add the cooled strawberry compote to the mixer and combine with the frosting (make sure your strawberries are completely cooled or you will ruin your frosting) Mix for 2 minutes.

• Add pink food coloring for a pinker frosting (optional)

There you have it, yummy strawberry frosting! I like this frosting best on top of a chocolate cupcake- it’s a fun take on chocolate covered strawberries 🙂 After all, who doesn’t love strawberries and chocolate!

Christmas Cupcake Essentials

Happy Monday! I woke this morning to FREEZING temperatures (well freezing to a Florida girl like myself). The Christmas season is officially here! Today I want to give you some tips on how to make gorgeous holiday cupcakes without breaking the bank.

In my mind, there are 4 things that are essential to making adorable (and yummy) holiday cupcakes.

  1. Holiday Sprinkles
  2. Holiday themed cupcake wrappers
  3. Holiday Flavors
  4. Red and Green Food Coloring

Let’s start with sprinkles. As I have said before, the sprinkles you put on your cupcake can make or break the presentation. You never want too many, but you don’t want too little. If working with large sprinkles, I usually use 5-6. But if I’m working with small sprinkles, I use 1/4 a tsp on each.

Let it snow!

Where can you find great and affordable sprinkles?? Well I’m glad you asked!

  • Walmart – In the holiday section you can find Wilton Brand holiday sprinkles for $1.99. Such a great price!! Only problem is your options are often limited and you have to go to Walmart. (I avidly hate that place!)
  • 

 

  • Ross, TJ Maxx, Marshalls, Tuesday Morning – Any of these stores will carry season sprinkles in their “gourmet food” section. You can get a decent sized bottle of sprinkles for about $2.99. Larger containers of sprinkles range from $4-$6.

 

  • The Dollar Store – Yup, that’s right, the dollar store! You can always find non periels, and sanding sugar in festive colors at your local Dollar Store. You won’t find one likes snowflakes, trees, or candy canes, but hey…for only a dollar, what do you expect 🙂

The key is variety – you want a good variety so you can combine different sprinkles and have your own custom looking cupcake!

Next on the list are cupcake wrappers. This is simple… Michaels Craft store. They have ADORABLE cupcake wrappers at really great prices! You can get 50 Wilton brand wrappers for $1.99. You can even print off this coupon and get 40% off! http://mic.michaels.com/20101205SLUSLP.aspx 

Moving on to Holiday Flavor. The key to a fabulous Christmas Cupcake is the flavor. You want something festive, something people don’t have all year long. Think of flavors like:

  • Mint
  • Candy Cane
  • Pumpkin Spice
  • Egg Nog

Last but not least, we get to the food coloring. You want to make sure that your frosting is as festive as the rest of your cupcake. Red and green frostings can add a seasonal touch to simple frostings like vanilla, marshmallow whip, or buttercream.

Again, I find that Walmart has decent priced food coloring in their seasonal isle.

Strawberry Buttercream

Pretty in Pink!

It should come as no surprise to that I love anything and everything girly! Including the color PINK! I especially love pink around the holidays – aren’t hot pink Christmas trees adorable?? These days it’s “trendy” to decorate with colors other than the traditional red, green, and silver. So today I want to give you a recipe for festive strawberry buttercream cupcakes. These will be a huge hit at any holiday party and are really fun to decorate!

Strawberry Buttercream

 

Pink Holiday Cupcakes - Yum!

  • 2 sticks of softened sweet-cream butter (unsalted)
  • 3 cups of powdered sugar (no need to sift)
  • 2 tsp of Vanilla extract
  • 3 tablespoons of Strawberry extract
  • 2 tablespoons of whipping cream
  • Pink food coloring

Directions

  1. In a standing mixer with a whisk attachment, whisk together powdered sugar and butter on medium high speed. Once combined, whisk for about 3 minutes until light and fluffly
  2. Add the vanilla and strawberry flavoring – mix well
  3. Add the whipping cream and food coloring and whisk for another 3 minutes

Golden Butter Cupcakes

Complete with Snowflake Sprinkles!

  • 2 1/2 cup(s) (plus 2 Tbsp.) flour
  • 1 tablespoon(s) baking powder
  • 1/2 teaspoon(s) salt
  • 1 cup(s) milk
  • 2 teaspoon(s) (pure) vanilla extract
  • 1 cup(s) (2 sticks) unsalted butter or margarine, softened
  • 2 cup(s) sugar
  • 4 large eggs

Directions

  1. Preheat oven to 350ºF.
  2. In medium bowl, stir together flour, baking powder and salt. In measuring cup, mix milk and vanilla.
  3. In large bowl, with mixer at medium-high speed, beat butter and sugar until light and creamy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Reduce speed to low; add flour mixture alternately with milk mixture, beginning and ending with the flour mixture. Beat just until smooth, scraping the bowl occasionally with a  spatula.
  4. Pour batter into cupcake liners and bake for about 20-22 minutes.
  5. Let cool completely before frosting the cupcakes.

Chocolate Candy Cane Cupcake

Can  you believe that Thanksgiving is next week?!?! I can’t!
I feel like just last month I was working on a summer inspired  strawberry lemonade cupcake recipe . Boy how time flies! Today my post is another Holiday inspired recipe. It’s a yummy recipe to top your favorite  chocolate, vanilla, or white cake cupcakes with. Peppermint Twist! Yum!
Peppermint Twist butter-cream is a different type of mint then  my Green Mint Frosting (Recipe Here ) Peppermint Twist tastes just like candy canes!!

Peppermint Twist Buttercream
 

Peppermint Twist Cupcakes

  • 1 stick unsalted butter (softened)
  • 1 stick salted butter (softened)
  • 1/2 pkg. french vanilla instant pudding mix
  • 1/2 cup heavy cream
  • 1 tsp. peppermint extract (maybe a little bit more depending on how much mint flavor you like..I like a lot)
  • 1 cup powdered sugar
  • Red food coloring
Set your mixer on medium speed, beat the butter until smooth and silky. Turn the speed to low and add the pudding mix, when it is all incorporated, slowly add the cream, a little at a time. When fully incorporated bring speed up to high and beat for 5-7 minutes. Turn speed back down to low and add peppermint extract and powdered sugar by Tbsp.  Beat again at high speed for a good 5 minutes to ensure creaminess.
If you don’t want red stripes, crunch up some candy canes and sprinkle them on the top of your cupcake!
To get the red stripes in your frosting, draw three (3) red food coloring lines inside your piping bag. Put the frosting in the piping bag and begin to pipe onto your cupcakes. Voila…red and white frosting that is as delicious as it is beautiful!!
